This vibrant salad combines tender grilled sirloin steak with juicy watermelon, which chars well on the barbecue. This salad is completed with a zingy dressing made with lots of fresh ginger, bird’s eye chilli and lime juice. It’s a dish that’s really big on flavour and is a great way to use watermelon in the warmer months.
Combine all the ingredients for the dressing and mix well.
Heat two gas burners on the Jupiter Outback BBQ and set the heat to high.
Pat the steak dry and rub lightly with oil, then season really well with salt. Cook over high heat, flipping frequently, until cooked to your liking.
Add the watermelon wedges alongside, and cook for a couple of minutes, or until charred, turning once.
Allow the steak to rest before slicing, then combine with the grilled watermelon, sugar snap peas, cherry tomatoes and herbs. Top with the dressing and serve immediately.
Serve this salad with some rice to make it more substantial, or some boiled new potatoes.
