Kansas Style Baby Back Ribs, Garlic Fries & Slaw

Ingredients

  • 2 whole racks of baby back pork ribs (called slabs in the USA)
  • BBQ Ben General Rub
  • 100mls Barbecue Sauce
  • For the Garlic Fries:
  • 500g potato fries (if frozen defrost for 1 hour)
  • 100mls rapeseed oil
  • 4 cloves garlic minced
  • 100g finely grated parmesan cheese
  • For the Red Slaw:
  • 1 whole shredded red cabbage
  • 200ml (7fl oz) tomato puree
  • 1 teaspoon BBQ Ben Original Sauce
  • 1 tablespoon English mustard
  • 1 teaspoon Tabasco
  • 1 teaspoon Hendersons Relish
  • 100ml (3½fl oz) mayonnaise
  • 1 tablespoon sugar
  • 3 tablespoons vinegar
  • ½ tablespoon salt
  • ½ tablespoon pepper

Directions

1.

Prepare ribs

To prepare the ribs remove the membrane from the back and trim off any excess fat.

Apply rub

Sprinkle the rub generously all over the ribs.

Rest

Cover and rest in the refrigerator for 2 hours.

Add wood chips

You can add natural wood chips such as apple, maple or pecan to the fire in the Outback Smoker Box to impart a smoky flavour to the ribs as they cook.

5.

Add ribs

Set the ribs on the indirect heat side of the grill for about 30 minutes. Flip them around and cook for another 30 minutes.

Add sauce and cook

Cover in foil, add barbecue sauce and indirectly cook for 2 hours.

Enjoy

The ribs are done when you can easily pull two ribs apart and the meat falls off the bone.

9.

Make Garlic Fries

Place the fries into a mixing bowl and add the oil and garlic.
Coat the fries with the oil and garlic and place into an Outback foil tray.
Place onto the Outback barbecue on a high heat.
Let the fries cook until browned on the bottom and shake 3 times every 4 minutes.
Sprinkle the parmesan over the top and return to the heat for a final 4 minutes.

Make Red Slaw

Combine all the ingredients in a bowl.
Chill before serving.
