Fire-up the Outback for a Christmas turkey barbecue!

Free-up your festive kitchen oven by firing up the barbecue for a succulent, crisp-skinned full-flavour Christmas turkey.

Choose an Outback Kettle Charcoal Barbecue, or an Omega Charcoal for a smaller bird, or any of the Outback Gas Barbecue range with a roasting hood, and once up to temperature - a constant 180C - your 'outside oven' is set to go.

With a charcoal barbecue sit the turkey on the grill with the hot (white) coals set off to the sides, so the indirect heat circulates around the cooking bowl and is reflected off the lid. Allow 15-20 minutes per pound with vents half open, and a container of shallow water beneath the grill will keep the turkey moist, catch the juices and provide a base for gravy. If your choice is a gas barbecue, light only the two burners on either side of the turkey.

Some cooks prefer to wrap the turkey in pierced foil to allow the heat to circulate, and it's a good idea to brush-baste the turkey a few times during cooking. Whether using a charcoal or gas barbecue, it's a good idea to brine the bird before cooking to ensure it remains moist.

Simply dissolve salt and seasoning (such as spices, herbs, garlic and a little brown sugar) in a large container of water before adding the turkey, making sure it’s completely covered. Leave for around 10 hours or 1 hour per pound of meat.

When the turkey’s ready, remove from the brine and rinse thoroughly in cold water. Pat dry and fire up the barbecue! If you don't have a meat thermometer, check the flesh between thigh and body for clear-running juices to make sure it's cooked. Rest the bird for the best part of an hour, and serve with all the trimmings.
